Abstract

A study comparing the 3- and 5-meal plans of food service, as used in long-stay geriatric units in San Bernardino County, have been compared. Three homes utilizing the 5-meal plan and three utilizing the 3-meal plan, to serve as controls, were chosen. A random sample of ten patients from each home was observed for three days to find the daily average nutrients in the foods served, eaten, and wasted. Also, interviews to compare factual information and attitudes were utilized for sample patients and personnel. The nutritional data was analyzed on the computer.

The results indicated that those on the 5-meal plan had a tendency to consume more vitamin A but less iron and niacin. Some of the advantages indicated for those on the 5-meal plan were better utilization of the dining room by the patients, less nutrient waste, perhaps less raw-food expenses, and less between meal eating by the patients. However, differences between the homes of one group often showed more variance than that found between the two main groups being compared.

It appeared then, that there was no particular virtue in using the 5-meal plan unless it was organized so well that necessary cooperation occurred among the staff and patients to take full advantage of the possible benefits.
